Shi Mei Hainanese Chicken Rice

About Shi Mei Hainanese Chicken Rice

Opened by the deceptively young Mr Tan Siew Teng, the skills inherent in Shi Mei Hainanese Chicken, is actually passed down from Mr Tan’s senior shifu.

Mr Tan learned the skills the old fashioned way, from kitchen cleaner to selected disciple, to now boss of 3 outlets!

The chicken meat is especially touted to be really tender, the sesame chicken teases the tastebuds with its crispy skin, coating of sesame seeds, just right nutty flavouring, and a melt in mouth texture. The chicken is served on a bed of crunchy bean sprouts.

Their roast pork is crispy on the skin, succulent and juicy on the inside. Their regulars also recommend ordering tofu on the side!

Social Media

Shi Mei has its own social media as well, and much celebrated by various influencers.

Fun Fact

What's so special about Hainanese Chicken Rice?

Hainanese Chicken Rice is a dish that is uniquely found in Hainan. It uses wenchang chicken. In the past, when Singapore just started out as a trading port, many Hainanese immigrants came over, introducing their culture into Singapore. The major difference between the Hainanese chicken rice in Hainan and Singapore would be the stock used. In Hainan, chefs would cook using pork-bone and chicken-bone stock, on the other hand, our local chefs would avoid using pork for this dish.

Over time, it is inevitable that dishes such as the Hainanese Chicken Rice would evolve and include some local influences. The Cantonese significantly influenced Hainanese chicken rice. The Cantonese were famous for their pak cham kai which means white-cut chicken and this inspired Hainanese chefs in Singapore to adopt this style of preparing the chicken for their Hainanese chicken rice dish. As an individual eats each mouthful of this dish that is rich in history and flavour, it gives people a warm fuzzy feeling that is nostalgic.
